In addition to my site “William Henry Outdoors,” where I describe my adventures in fly fishing, camping and hiking, I decided to write about my other love, BBQ. I started smoking meat about 7 years ago and fell in love. It began with ribs and poultry, but I have recently graduated to brisket. While I’m originally from Tennessee and have always loved BBQ with lots of sauce, I have recently discovered the art of Texas BBQ, where I let the smoke do the talking. Let me first disclose that I am no Aaron Franklin. I am a backyard enthusiast and I have one of the cheapest offset smokers on the market. While I hope to change that in the near future, I have managed to get some seriously good flavor with it. I want to share some of my secrets and hopefully influence some of you to start smoking meat as well. It is definitely a lot of work, but the results are so worth it!.
